Track user-related activities on engagement

We need the ability to track user-related activities on engagements, such as:

• When a user is added

• When a user is removed

• When permissions are changed

Additionally, we're currently unable to retrieve these log details from Datadog, even though the events occurred. It appears that the logs are not being recorded in either Datadog or Mongo.
