It would be great to be able to create sub events. For example, if you'll have a series of Leadership meetings, I'd like to be able to create a large umbrella for leadership meetings and then be able to list all the different meeting dates under it so that I can roll them up.

I wanted to circle back with you on this idea to mention that there is a Concourse idea that seems related to what you had initially submitted here to streamline the ability to create recurring milestones. You can create 'Tasks' and 'Sub-tasks' under Events.
These can be used as the Sub Events you're looking for.
All Tasks and Subtasks work item types have the same attributes as the the Event work item type.
By using Tasks or subtasks, you can create the umbrella effect you're looking for in the Gantt view
